Jack O' Looter Pumpkin Spice Grogtail

All Hallows Eve is upon us and so is that most perfect of seasons: Autumn, and with it, comes all things Pumpkin Spice!
Our lovely tavernkeeps take time out of their grog slinging and brawl management to adorn their taverns with that key seasonal decoration, the pumpkin. While the outpost shops carry varied cosmetics for stylish pirates to consider, the Jack O' Looter is the most prolific outfit seen around the Sea of Thieves during this special time of year.
Tess, always the grog tester and enthusiast, launched this Pumpkin Spice forward grogtail to celebrate Festival of the Damned. She hopes her Broken Tusk clientele appreciate the time and creativity, as there is a little prep work required for these, so pirating takes a back seat this month.
MAKE AHEAD: Allspice simple syrup, dark brown sugar simple syrup, pumpkin puree blend. Time required is 2 hours for prep. Once all prep work is done, time to make the grogtail is roughly 3-5 minutes.

Grogtail Ingredients
2 oz spiced rum
1.5 oz pumpkin puree blend
3/4 oz allspice simple syrup
1/2 oz coconut sugar or dark brown-sugar syrup
1 oz fresh mango juice
1 oz cold espresso or dark coffee
1/4 tsp vanilla extract
1/4 tsp pumpkin pie spice
1 dash Angostura bitters
Tiny pinch of salt
1 oz heavy cream
Nutmeg, pumpkin spice, and allspice berries to finish

Prepare an eight ounce rocks glass by adding a few large ice cubes. Set aside.
In a shaker add everything except the heavy cream with plenty of ice.
Shake until well combined, a few seconds. Add in the heavy cream and shake hard for 10–15 seconds. This makes sure the cream is well combined with the rest of the drink.
Strain into prepared rocks glass, over the ice.
Garnish with a dusting of pumpkin spice, nutmeg and a few allspice berries.
Allspice Simple Syrup
1/2 cup water
1/2 cup light brown sugar
1 tsp whole allspice berries, lightly crushed
1 cinnamon stick
Add these to a small saucepan and bring to a boil, reduce heat, and simmer for 5 minutes, remove from heat, cover, and steep for 20 minutes, then strain into glass container with top and cool.
Dark Brown Sugar Simple Syrup
1/2 cup water
1/2 cup dark brown sugar
Add these to a small saucepan and bring to a boil, reduce heat, and simmer for 5 minutes, remove from heat, then strain into glass container with top and cool.
Pumpkin Puree Blend
Add ½ cup pumpkin pie filling, ¼ cup coconut water and ¼ cup water to blender or processor. Process until fully blended, about one full minute. Refrigerate until ready to use.
